Excuse me Ma'am, but have you been eating frosting tonight?

I finally went ahead and made that butterscotch cake with kahlua cream frosting that's I've been dreaming about the last 2 weeks. And ya know what? It didn't turn out half bad. Also, I think I might be a little buzzed from the frosting I made. That's a good thing, right? So all in all NOT really a bad afternoon!






The cake is really dense and moist, and the frosting is really good. I used a bit more kahlua than I should, but hey I have no where to go tonight and I don't plan on driving, so why the heck not?! Also, I don't even know how to drive, so me all buzzed off frosting wouldn't really be the perfect time to learn, if ya know what I'm saying. This cake needs to be put in the refrigerator right after beig frosted, because You see, I walked away to do something and came back and things were looking a little bonkers. But Mr Refrigerator man fixed that! The frosting is just a recipe that I made myself since I couldn't find any that I liked, so if you don't want to use my recipe it's all good, find one, or make your own. You know the drill. But I must say I really like mine but who knows, might be the booze talking ;)








Butterscotch Cake with Kahlua Cream Frosting

2 cups all purpose flour
2 teaspoons baking soda
pinch of salt
1 1/2 cups sugar
1 cup butter
3/4 cup milk
1 teaspoon vanilla
3 large eggs
1 cup butterscotch chips, melted

Frosting

2-4 tablespoons kahlua (I used 4, so it came out REAL strong)
1 cup sugar
5 tablespoons butter
1 cup heavy whipping cream

For the cake preheat the oven to 350. Grease and flour a 13x9x2 inch baking pan and set aside. Sift together the flour, salt, and baking powder in mixing bowl. Add remaining ingredients EXCEPT butterscotch chips, and beat with an electric mixer on low for 30 seconds scraping constantly, turn on high speed and beat for 3 minutes. Melt the butterscotch chips in the microwave and them fold into batter. Mix well, and pour into prepared baking pan. Bake 25-30 min or until toothpick comes out clean from center. Cool on wire rack 25 minutes.

For the frosting, cream together butter and sugar. Add kahlua, set aside. In another bowl beat the cream until stiff peaks form. Fold cream mixture into cream and chill until ready to frost cake. Once the cake is frosted, CHILL for 1 hour before serving.
