
I'm not going to lie here, I was cleaning my kitchen, and was about to toss the bananas when I got the 'banana muffin' siren loud and clear in my head. Everyones made banana bread, but I haven't ever made muffins. So I basically just took my bread recipe and put it in a muffin tin, haha. Simple as that!
Banana Bread Muffins
3/4 C sugar
1/2 C canola oil
1 egg
1 TB pure vanilla
2 C flour
pinch of salt
4 ripe bananas, mashed
1 TS baking soda
1/2 TS ground cinnamon
Topping (optional)
2 TB flour
1/4 C light brown sugar
pinch of ground cinnamon
1 TB butter
Preheat oven to 350 degrees, line a muffin pan with liners OR grease/spray with cooking spray, and set aside. Mix sugar, oil, and egg in a large bowl until pale yellow and creamy.

Add in mashed bananas and vanilla, stir until combined. Add all the dry ingredients, and stir until smooth. It will be lumpy, and if you're like me EXTREMELY lumpy because I like chunks of bananas in my bread/muffins! Spoon into muffin tin.

Mix first three ingredients for topping together with a fork, cut in butter. Sprinkle on top of batter and bake for 20-25 minutes or until a toothpick inserted in middle comes out clean. MMMMMMM

Once you take them out of the oven, cool on a wire rack. While they're still warm, spread a tiny bit of butter on top and enjoy a bite. Soooo good! I promise :)
