Enchilada Pizza

I had the luxury of waiting 2 hours at the laundromat today. Luckily there were tons of magazines for me to look through. Red Book, Woman's Day, and Family Circle. Yep, as you all can image it was an exciting 2 hours. I ended up browsing through the 5 magazines I had in 5 minutes or less, that is until I got to Family Circle. There is some interesting stuff in that magazine, and that's where I found the original recipe for Enchilada Pizza!



When I saw this recipe I knew I had to try it. I love enchiladas and it could easily be made with ingredients that I usually have at hand at all times anyways. I changed the recipe a bit to my liking, as you can too! It is really a great starter recipe. The possibilities are endless.

Turkey Enchilada Pizza Recipe adapted from Family Circle February 2010

1 10 oz can enchilada sauce
1 C shredded mexican blend cheese
2 C cooked ground turkey (seasoned as you like, I used cumin, cayenne, and various spices)
1 Roll Pillsbury Refrigerated Pizza dough
Sour Cream, Salsa Verde, Tomatoes, Various other toppings - WHATEVER YOU LIKE/WANT!


Preheat oven to 400 degrees. Roll out dough onto a cookie sheet sprayed with cooking spray. Spread enchilada sauce over crust, almost to edges but not fully covering the entire dough. Sprinkle cheese over sauce, and then the ground turkey. Bake for 15 minutes or until crust is golden brown. Serve with salsa verde and other toppings if desired.


There ya go! An easy, fuss free dinner.
