Bacon Fudge

I'm not too sure why some people get absolutely freaked out by the pairing of chocolate and bacon. When I first heard of it, I didn't freak out. I was intrigued. After having the two together, why not eat chocolate and bacon in dessert form? It's awesome!

I've made fudge before that had bacon in it. It also had nuts in it, which I really liked. This time I didn't put nuts in, I also didn't use candied bacon. I liked the fudge I made before, just everything was sweet. There wasn't that much of a difference when you bit into a piece of bacon with the chocolate and one without. So I just used some straight up apple wood smoked bacon. Mmm mmmm.

I suppose you could call this a 'cheater' fudge. I just call it quick and easy. Who doesn't like those kind of recipes? Plus, we are in the process of packing, we're moving back to the east coast due to a family illness, so it's time to use all that's in the pantry, and have a good time.

Bacon Fudge

1 lb semi sweet chocolate chips, melted
1 8 oz packaged cream cheese, softened
1 14 oz can sweetened condensed milk
8 slices good quality bacon, cooked crisp and crumbled
1 TB pure vanilla extract

Melt chocolate, mix in cream cheese, vanilla, and sweetened condensed milk.

Mix until thoroughly combined and no cream cheese streaks remain.

Fold in the bacon, and pour the mixture into a 13x9 baking dish that has been lined with parchment paper. Chill overnight or until firm. Cut into small pieces, unlike me - I just cut them into bars. Bad idea, we ate way toooo much ;)
