I also decided to make these last minute before a friend left on a road trip. I thought it would be nice for her to take some to nibble with on the way there. She said she really loved them, so that made me happy. Jason, who is a very picky eater ate FOUR. Yep.. The man who doesn't like lemon, ate four lemon cookies. And these babies were super lemony. On this very day I also made very vanilla scones, that recipe will soon be up for your enjoyment!
Lemon White Chocolate Chip Cookies
1/2 C unsalted butter, softened
1/2 C sugar
1/4 C light brown sugar, packed
1 egg
4 TB fresh lemon juice
Zest of 1 lemon
1 1/4 C flour
1/4 TS salt
1/2 TS baking soda
1 C white chocolate chips
1 TS pure vanilla
Preheat oven to 350 degrees, line two baking sheets with parchment paper, and set aside. Cream together the butter and sugars until light and fluffy. Sift together the flour, salt, and baking soda in a medium bowl, set aside. Add lemon juice, zest, vanilla, and egg to butter mixture. Mix until combined. Add the flour and mix thoroughly, Scraping bowl as needed. Fold in the white chocolate chips.
Using desired method, place balled dough onto prepared baking shit. I used a small ice cream scoop, I feel that's what works best and easiest for me when I am looking for all the cookies to be uniform size and shape. Do as you wish, just make sure you have fun!
Bake 10-13 minutes or until bottom/edges are lightly golden. If you're like me, you are a tough cookie (no pun intended) and your hands are use to the heat, so just lift one up, if not... Check it out with a spatula ;)
Let cool on baking sheet for a few minutes, then transfer to wire rack to cool completely. Then, you must eat them up before all your friends/family do. They are so yummy, cross my heart!
