Banana Oatmeal Breakfast Cookies

The past few weeks I've been doing breakfast smoothies, I love me a good smoothie, but I got the hankering for something different. I wanted to change it up a bit, but I still wanted something easy and something oatmeal. Thus the banana oatmeal cookie was born. I have made this using sweet potato, pumpkin, and lots of other stuff. So, if you're feeling up to it, get crazy in the kitchen and adapt as you see fit.



Breakfast Cookies

3 ripe bananas, mashed
2 C rolled oats
1/2 C dark chocoalte chips (optional, but tasty)
1/2 C crunchy peanut butter
splash of maple syrup
splash of coconut milk (optional)


Preheat your oven to 375. Spray a baking sheet with oil, and set aside. In a large bowl Mix all together until combined, if too thick add coconut milk.


Drop spoonfuls onto prepared baking sheet. Bake 15 minutes, or until light golden. Cool completely before eating. I made 12 large cookies.
